Mixed tomato salad with horseradish and red wine vinegar

A full flavoured and simple salad that is perfect with beef or goats cheese

10 Minutes Serves 4 Vegetarian
  • One pink cocktail vine (approx 300g)
  • One beef tomato
  • One cherry on the vine (approx 100g)
  • Roasted Tomato Stall sea salt
  • Black pepper
  • Extra virgin olive oil (we recommend Omed Piqual Extra Virgin Olive Oil)
  • Omed cabernet sauvignon vinegar
  • Two heaped teaspoons of horseradish (can also use freshly grated)
  • Chopped fresh parsley

Wash and chop tomatoes, then season with salt and pepper. Add a good glug of olive oil, omed vinegar & horseradish then mix well. Sprinkle with chopped parsley and serve at room temperature. Tastes best when left to marinade for an hour.
