Feta Watermelon Salad

This gorgeous quick and easy salad will brighten up your home this autumn

15 minutes - Serves 8

Ingredients
  • 1kg Isle of Wight Mixed Family tomatoes, cut into large pieces
  • 500g watermelon, cut into large pieces
  • 2 tbsp sherry vinegar
  • Sea salt
  • 200g feta, roughly crumbled
  • 1 tsp fresh oregano
  • Handful basil leaves
  • 100g pitted Kalamata olives
  • 80ml extra virgin olive oil
  • Black pepper
Method

Gently mix the tomatoes and watermelon with the sherry vinegar and a good pinch of sea salt in a bowl.

Add the feta, oregano, basil and olives.

Drizzle with the olive oil and season with black pepper.
