Oak Roasted Tomatoes are one of the most popular and unique products available from the Tomato Stall range.
The process of creating them begins by searching for a super-sweet, fleshy cherry from the many varieties we grow. Once selected, the first plant seedlings go into our glasshouses in early January. We then wait in anticipation for 10—12 weeks for the first signs of ripening. When the tomatoes are perfectly ripe they are ready to oak roast.
The tomatoes are first washed, sliced in half and layered onto roasting trays. They are then roasted slowly for several hours to concentrate their natural sweetness and flavour.
As they roast, the smoke from locally sourced oak chippings fills and circulates in the air within the oven giving the tomatoes their unique, irresistible taste. The tomatoes are then packed in oil ready to make the trip to farmers’ markets, shops or avialable to buy from the online shop.
Oak Roasted Tomatoes can be used as an ingredient in all sorts of dishes. Try stirring a spoonful into fresh pasta, risotto or your favourite salad. You can also add them to pizza, bruschetta or, as many people insist, straight from the pot onto hors d’oeuvres or a good bread and soft cheese– the possibilities are endless.
